Apple Caramel Cake

Monica describes the Wintern's latest afternoon snack creation

     Running out of dessert for our afternoon snack?? Can’t let that happen. Annie and Monica to the rescue! Browsing through the kitchen, wondering what to make, we realize that we have a whole pile of apples, nearing the end of their tasty lives.

     Running through the list of apple-y desserts, we settle on what may very well be the most delicious of all-- apple cake with caramel topping! Quick and easy to make, full of apple-y goodness.

     Here is the recipe for next time you have an apple overflow:

Beat together :
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 1/2 cups vegetable oil
  • 3 eggs (from our own chickens of course)

In a separate bowl mix:
  • 3 cups whole wheat pastry flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp nutmeg

Combine wet and dry ingredients then stir in:

  • 5 peeled and diced apples
  • 2 1/2 tsp vanilla
Bake at 325°F for about an hour.

Now for the caramel topping~ Yum Yum!!

Melt

  • 1/2 stick butter

Add in

  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • pinch salt
Cook 2 minutes

Stir in

  • 1/2 cup fresh goat milk!

Boil 2 minutes stirring constantly

Poke holes in the top of the cake and pour the hot caramel topping over it.
